Give Them All A Good Roasting ?

Look for a 2kg joint well rolled and tied with no bone & scored skin
To serve 6 hungry mouths for a Fiver
( £2.50/kg at One Supermarket )
Dry the Joint and coat with Oil Salt and Pepper
Roasting tin with separate wire grill
Lay the meat Skin side up and cover with foil
Give in 10 minutes in a Hot oven (230C)
Then reduce the heat to 190C
Total cooking time about 2 hours 30 mins
But remove foil after One & Half Hours
Baste ( in own juices) and turn Joint every 45 mins
Check that the joint centre is cooked through but not dry and overcooked
Remove from Oven and allow to settle before carving
Share the Crackling.
Serve with Apple sauce
Bramleys are best
Peel and Slice
Add very little water to make into mush on low gas
Then add nob of butter and sugar to taste
Continue to cook until all is mixed
Can serve Apple Hot or cold
