A Better Beef Stew
500g Stewing beef
1 bottle red wine (Phu Yuk ?)
Chopped Onion
Celery ( Or Green Pepper )
Parsley or ( Mixed Herbs ) Rosemary/Thyme
A Bay Leaf or Two
Carrot
Potato
Parsnip
Swede
Etc..
Chopped Garlic
Tomatoes – Skinned
Salt & Pepper to taste
Olive Oil
Trim & Cube meat
Marinade all other prepared veg and leave overnight in fridge or pantry
Next day
Remove meat and squeeze – brown in frying pan with oil
To Stew Pot add meat and veg then simmer until tender
Remove meat and set aside.
Strain the veg juices for the gravy
Bring Sauce to the boil
Roux – ( flour & butter )
Add Roux to thicken sauce
Add some Dry Sherry ?
Serve with bread or
Potatoes – Boiled or Jacket
Veg with colour
