Crunchy Scones for Diabetics to Have with Soup,
Instead of Bread ?
225gms Wholemeal Flour
225gms White Flour
1 Scant Tsp Salt
1 Scant Tsp Bicarbonate of Soda
1 Scant Tsp Cream of Tartar
60gms Unsalted Butter
140mls Natural Yoghurt
140 mls Milk to mix
1 Beaten Egg
Sift Flours, Salt Soda etc.. & Rub in the Butter then add the Egg
Put Yoghurt and Milk to 280mls in a Measuring Jug & Add to the Flour mix
Form into a soft dough
Then knead for 1 minute
Oiled Baking tray
Cut into desired lumps, flatten and prick with a fork ( suggest 12 scones )
Pre-heated oven 220C or Mark 7 for 8 – 10 minutes
Make sure the middle is cooked through but not completely dry or hard.
When Just coloured test with skewer ?
For Tea Scones add 60gms of Sultanas or Raisins
